Vegan Pesto Linguini

Ingredients - Pesto

  • 1/3 cup Brazil nuts
  • 1 cup cilantro
  • ½ leaf collard greens, sliced
  • ½ cup chopped fresh avocado
  • sea salt

Ingredients - Linguini

  • Fresh coconut meat from ½ coconut

Directions - Pesto

Add Brazil nuts, cilantro and collard greens to food processor; combine until oils build up along side of processor, about 2 minutes. Add avocado and mix into a paste (note: add more avocado until a pasty texture is achieved). Add salt to taste.

Directions - Linguini

Slice coconut meat into thin, noodle-like strips. Mix coconut noodles and 1-1½ Tb of pesto in a mixing bowl (to taste). Spoon onto serving plate and garnish with cilantro, chopped sundried tomatoes, chopped avocado and quartered whole tomatoes.
