Directions - Pesto
Add Brazil nuts, cilantro and collard greens to food processor; combine until oils build up along side of processor, about 2 minutes. Add avocado and mix into a paste (note: add more avocado until a pasty texture is achieved). Add salt to taste.

Slice coconut meat into thin, noodle-like strips.
Mix coconut noodles and 1-1½ Tb of pesto in a mixing bowl (to taste). Spoon onto serving plate and garnish with cilantro, chopped sundried tomatoes, chopped avocado and quartered whole tomatoes.
